Di'lishi!

Although Pinehurst is small, it is growing. In fact, supposedly this area is one of the three fastest growing in all of North Carolina right now. Within the last 9 months of us being here, several new places have opened and several more are slated to open in the next few months which is very, very exciting! Where there used to just be Ross and TJMaxx, now we have a Kohl's that opened last month. Hobby Lobby should be opening any day now, and a Dick's Sporting Goods is opening next fall. There's even a Costco being built in Cary (45 min. away) versus Raleigh where we are going right now (90 min. away). We also got a Rita's, Texas Roadhouse, and now, drum roll please, a frozen yogurt place called Di'lishi! HOORAY!

I. LOVE. FROZEN. YOGURT. BARS. It's the tangier less heavy taste (I really dislike ice cream which is weird, I know), plus the fact that you can load all sorts of bad-for-you toppings that seals the deal. When we left Las Vegas I was beyond sad to leave our neighborhood U-Swirl. We kept that joint in business!
My favorite combo is the raspberry pomegranate sorbet, usually twisted with the tangy plain (or vanilla) flavor, with lots of Reeses peanut butter cups on top. When armed with this wacky combination, nobody wants to share with me which is fine by me. It has some PBJ notes that are addictive.
The fact that we've already been here THREE times in its opening week tells you we are glad they came!

A Long Time in Coming!



On May 3, 2006, Jonathan basically signed his life (and mine, and Lucy's, because we found out like 3 days later that I was preggo) away by committing NINE years of service to the US Air Force. The recruiter even let Jon keep the pen he signed the contract with because it was such a life changing event. So, in light of that momentous occasion, I would just like to say, this is the beginning of the end, Uncle Sam! The first four years were devoted to school of course, so although it was a looooong journey we knew it was what we wanted to do, then last year with the AEGD Air Force residency, it was a year that would only be "worth it" educationally but not count towards any of our four years of payback we owed, but this, our first year of ACTUAL PAYBACK-- from 2011-2012, feels like one of the biggest "ticks" off the nine year journey. So you know what that means: only 3 years left! Just imagine how this feels... To look back and see only 3 years left, after we've already completed 6 feels really, really good.



Here's to you, kid. Three more years of slaving for the military and then WE get to decide where we live, where we work, and how and where we spend our time!! Hooray!

RIP Blueberry Sparkle!

Well, I guess fish (unlike cats) do not have 9 lives. About a week ago I noticed our fish-of-many-aliases went belly up, literally. I then had a horrible dilemma on my hands, I could a) hurry to Petco and replace our little beta Blueberry Sparkle with a look alike, b) dispose of his remains quickly and quietly and hope the kids just didn't notice, or c) somberly gather the kids round and tell the truth of what happened while wisely turning it into a great FHE lesson about the Gospel and life and death, etc. Naturally being the lazy bones that I am, I opted for "b." Unfortunately, that lasted about 3 days before Luce went to feed BS (Blueberry Sparkle from here on out) and totally FREAKED. OUT. Now I was reeeally stuck! I tried a bit about how he was on vacation for awhile, but that didn't go over so well, so I was stuck with telling the truth about how BS died. Now I know how my mom felt all those years ago when she ran over our cat and had to tell us she killed it... That was awfully traumatizing. Poor Lucy cried for a good 20 min. but Jon (the better parent) stepped in and turned it into a great teaching tool. Now Lucy looks forward to seeing BS in heaven. As for Zachary, he hasn't even noticed the fish is missing. I was 1 for 2!
A picture of happier times enjoying Elmo-Wubba-Heart-Blueberry-Sparkle who joined the family last February. I love this picture. They were SO excited to get their first pet!! And just so you don't think I'm totally heartless, I saved that fish from an early death by insisting he come with us on our across-the-country road trip last summer. Jon wanted to flush him because he didn't think he'd survive 5 days in a hot car, but I knew how much he meant to the kiddos, so we strapped him into a shoe box and took him with us wherever we went (including the hotel room). And yes, he lived, but I believe the arduous journey was too much for the little guy and he was never the same since. He missed Vegas just as much as I do. RIP Blueberry Sparkle!
This picture doesn't need a whole lot of explaining if you read my post a few weeks ago about little Ratatouille. I turn my back for ONE second and he is COVERED head to toe in flour. I mean seriously, his face and hair were white, like the makeup artists from "Twilight" had gotten a hold of him. Aaarggghh!!
So, I realize it's been awhile since my last post, but here's proof that we are alive and well (picture was taken today!). There's not a whole lot of bloggable things happening in lil ol' Pinehurst so I'm gonna have to get creative this summer if I'm going to have enough material to make a book out of it. I did spend all weekend watching "Whale Wars" episodes on Animal Planet (so interesting! so controversial!) so that tells you how exciting things have been around here, or just how pathetic our life has become. :) We do have some fun things to look forward to this summer though, with a trip up to Richmond and DC over Memorial Day, a sister visit from Whitney in June, some beach trips planned to the Carolina coast, a trip home to Idaho and Washington, and a girls' weekend in NYC, so stay tuned faithful readers!

Easter Fun!

Well, Easter weekend fell right along with Zach and Jon's birthday so we got spoiled with three days right in a row of candy, surprises, and par-tays!!

Saturday after we got back from Jon's birthday dinner we decided we'd better dye eggs per tradition. Lucy loves this tradition because of all the beautiful and limitless color possibilities. Pink?!? Red?!? Purple?!? Ahhhhhh.
Zach loves this holiday tradition simply because he knows just how to push his big sister's buttons. He takes her beautifully dyed eggs and dumps them in more dye before she can stop him and makes them all brown. He, he, he... We call him the lil' racoon because his hands are so fast!
Sunday morning the kids woke up at the crack of dawn in order to find their Easter baskets. I love Zach's face in this picture-- sleep groggy eyes and this awesome grimace about his Spiderman socks!
We decided not to do toys this year and Lucy kept talking about what the Easter bunny was going to bring her, so I was worried she'd be super disappointed with just a basket of candy. Who was I kidding?? She didn't say one word.

Easter Sunday

The Big 0-3 and 3-0!

Well, the boys in our family just celebrated their birthdays this past weekend-- the big 3 for Zach, and the really big 30 for J-Man. Here's a rundown of the 2 day celebration, but first, my personal favorite, a walk down memory lane:

Zachary Jonathan Cardon, born 4/6/2009, 7 lbs. 4 0z. born @ 7:30 p.m. A VERY happy arrival!

Last year on his 2-year old birthday with his big blue eyes and curly blonde hair.
And one year later, as he turns another year older at age 3. A bright and cheery morning wake up to LOTS of presents. Hooray!
Zach has been super excited about his birthday coming up. When he woke up to all those presents he thought Santa had been here again.:) This is his new dinosaur hat Lucy got him.
Opening presents! He got a new Hot Wheels race track, a bunch of new Thomas trains, and some other fun boy toys to grow on. Luckily Jon had the day off so he got to enjoy the celebrations as well.
A delicious birthday breakfast of waffles, strawberries, whipped cream, and bacon. Actually, this breakfast was more for Jon's birthday than Zach's. His all-time favorite breakfast food is waffles, and as he recently pointed out, I've never once made waffles in our almost 8 years of marriage. Indeed, when I opened our waffle iron to use it, the wax paper was still inside. Whoops!
After playing with the new toys for awhile, we headed up to Asheboro to the North Carolina Zoo. Zachary LOVES the zoo, and was super excited about seeing all the animals again. We started in "North America" at the alligators. When you live in the South, who needs a zoo to see these guys anyway?
Lucy with the bison. I love bison. I think they remind me of those summer vacations to Yellowstone. I wish they still roamed the prairies.
Zachary fascinated by the honey bees! They had a glass "hive" so you could see all the busy bees making their honey. Pretty amazing.
We then found the carousel, and Zach knew right away he wanted the crocodile. Luckily we had to wait a turn or two, so when we finally got through we were near the front and got first pick.
Lucy picked the cheetah. What is it about carousels that kids LOVE?
We then made our way to the "Africa" section where the baboons fascinated us for a good 30 minutes. They had the zebras, giraffes, elephants, and ostriches all together in the same enclosement.
By about 4 p.m. Zach zonked out and since we'd had such a big breakfast we skipped lunch and were by that point STARVING, so we walked the 1.5 miles back to "North America" and headed out for some dinner!
Zach "picked" Cracker Barrel (more like it was the first place we saw off the freeway that we all liked) and enjoyed his mac and cheese and free birthday sundae. Yum!
Since we were so close to Greensboro, we drove the rest of the way and found REI for Jon. This is his mother ship. He got to spend all his birthday money while I entertained the kids with camping gear.
Even though we got back pretty late, we hadn't dug into Zach's Transformer cake-- which when we went to Michael's a few weeks ago to pick out a cake pan, he was ADAMANT that he wanted it, even though he has no idea what Transformers are, and they had Lightning McQueen, Buzz Lightyear, Spiderman, choo-choo cakes, etc. This guy knows what he wants. It looks awful, but he was totally happy with it.
Playing one last time with his new race track until 10 p.m.!! Only a birthday could justify such a late bed time...
The next day was Jon's birthday, so he got to pick the schedule. He decided to spend the afternoon hiking at Raven Rock state park, and then get dinner with us at Outback. He's pretty easy to please. We sure love both boys in our family and are SO thankful we get to celebrate birthdays with them. They are the absolute best, Best, BEST son, brother, husband, father, etc. a family could have. HAPPY BIRTHDAY!!

Ratatouille

Meet Ratatouille:

Meet Zachary:
They kinda look alike, right? Zachary has long ago decided that as well as being a train engineer when he grows up he would also like to become a little chef. As soon as he hears me rummaging through cupboards and drawers in the kitchen, he bolts in after me and asks, "What you making, mom?"
He then slides our big wooden step stool over right next to me (I have many a stubbed toe to prove it) and proceeds to be my little chef and add a little of this, a little of that into whatever it is I'm making. Mostly he helps add salt and seasonings to dinner, stir things that are on the stove, but his most, MOST favorite thing is when we work with flour. He LOVES flour...or making a mess with flour, whatever the case may be. Pizza dough, bread dough, cookies, and cakes-- this little man ends up covered head to toe in flour regardless.
This is what my poor mixer and counter look like after Ratatouille assists in the kitchen, but he is learning all kinds of things. He repeats every ingredient I name that he dumps in the mixer for me, so while he still speaks in broken English, he at least knows your basic ingredients for most dishes. I'm beginning to like my little helper.:)
